Your Role
We are looking for a Sous Chef with creativity, passion, and a desire to be part of SushiSamba’s first opening in Italy. In this role, you will contribute to the management of the kitchen and support the Head Chef in maintaining the highest standards of quality and presentation.
Your responsibilities will include:
- Supporting the Head Chef in overseeing preparation and service, ensuring every dish meets brand standards.
- Communicating effectively with the kitchen brigade daily to achieve culinary objectives.
- Training, motivating, and leading the kitchen team, fostering a collaborative and positive environment.
- Handling special guest requests, ensuring impeccable service.
- Maintaining order, hygiene, and safety in the kitchen, following HACCP procedures and food safety standards.
- Monitoring stock and production line organization to ensure efficiency and continuity of service.
- Actively contributing creative ideas for dishes and kitchen processes.
What We Are Looking For
- At least 3 years of experience as a Sous Chef or Junior Sous Chef, preferably in Japanese or fusion restaurants.
- Experience in main kitchen, robata and sushi sections.
- In-depth knowledge of Japanese cuisine and international culinary techniques.
- Excellent command of Italian and English.
- Team spirit, natural leadership, and a positive attitude.
- Experience with HACCP procedures, food safety, and hygiene standards.

Sous Chef - Zanzibar
Company Description
- We are a privately-owned group of four luxury hotels and resorts located on the serene southeast coast of Zanzibar. The Collection epitomizes excellence in hospitality, service, and luxury while remaining authentic to Zanzibar's rich history.
Role Description
- This is a full-time, on-site role for a Sous Chef located in Zanzibar. The Sous Chef will oversee kitchen operations, including menu planning, food preparation, and ensuring high standards of food quality and presentation. Daily tasks will involve supervising kitchen staff, maintaining inventory, enforcing food safety standards, and contributing to new recipe development. The Chef will also be responsible for training and mentoring junior chefs, and monitoring kitchen cleanliness and organization.
Qualifications
- Proven experience as a Sous Chef or similar position in a 05 Star environment
- Expertise in food preparation, cooking techniques, and kitchen operations
- Strong leadership and supervision skills
- Knowledge of food safety standards and regulation compliance
- Excellent menu planning, culinary development, and presentation skills
- Ability to work in a fast-paced environment
- Effective communication and teamwork skills
- Culinary arts degree or related certification preferred
- Previous experience in a 4 or 5-star hotel or luxury resort is advantageous
Remuneration
- Between USD 3,000 and USD 4,500 based on your qualifications
